Tandoori Chicken



Ingredients :
  • Chicken leg pieces - 6
  • Lemon juice - 1/2 tsp
  • Red chilli powder - 3 tbsp
  • Salt
  • Ginger Garlic paste - 1 tbsp
  • Plain Yogurt - 6 tbsp (1 tbsp for 1 leg)
  • Turmeric powder - 1/2 tsp
  • Pepper powder - 1/2 tsp
  • Cumin powder - 1/2 tsp
  • Coriander powder - 1 tsp
  • Garam masala - 1/2 tsp
  • Methi powder - 1/2 tsp
  • Red food color - 1/8 tsp
  • Chat masala
  • Big Onion - 1 (sliced)
  • Oil - 2 tsp
  • Baking Tray 

Method :

  • Make several deep slits in chicken pieces. In a bowl mix red chilli powder -2 tbsp, lemon juice, salt to a thick paste. Apply the thick paste to the chicken pieces until it coats well in every slits. Marinate this for 30 minutes.
  • In another bowl take yogurt, turmeric, ginger garlic paste, pepper powder, cumin powder, coriander powder, methi powder, garam masala, oil, little salt, red food color mix it well. Then coat this mixture to the marinated chicken. Cover and refrigerate atleast for 8 hours or overnight. 
  • Preheat the oven to 375 degrees. Arrange the chicken pieces in the baking tray and keep it  in the oven for 25-35 min. Turn the chicken pieces in the middle to cook even on both sides.(If you like spray some oil while turn the chicken pieces)
  • Now turn the oven OFF, and let the chicken rest in the closed oven for 10 min
  • Serve and garnish with sliced onion and lemon squeeze. If you like sprinkle some chat masala.

Kothu Parotta / Egg Parotta / Chilli Parotta



Ingredients :

  • Frozen parotta - 4 
  • Egg - 2
  • Onion - 1 (medium sliced)
  • Tomato - 1 
  • Green chillies - 3 (chopped)
  • Mustard seeds - 1 tsp
  • Ginger Garlic paste - 1 tsp
  • Curry leaves - few
  • Turmeric powder - 1/4 tsp
  • Chicken curry masala - 1 tsp
  • Chilli powder - 1/2 tsp
  • Pepper powder - 1/4 tsp
  • Coriander leaves - few
  • Salt 

Method :
  1. Heat the tawa and cook the parotta on both the sides.Keep it aside for some time to cool.Then make the parotta into small pieces.
  2. Heat the oil in a pan add mustard seeds after it crackles then fry the green chillies, onion, ginger garlic paste, turmeric, curry leaves.Then add tomatoes, chilli powder and chicken curry masala cook until raw smell goes away.
  3. Then keep your stove in a very slow flame,add eggs and mix it well then add required salt .If the egg become half done then add the parotta and mix it well.cook it for some time.
  4. Finally add coriander leaves and pepper powder and mix it well.
Serve hot with raita and Enjoy !!!!

Kadalai Parrupu Vadai (Channa dal Vada)









Ingredients :

  • channa dal                  - 2 cups
  • onion                           - 1 (finely chopped)
  • green chillies               - 6 (finely chopped)
  • coriander leaves         - 3 strands (finely chopped)
  • ginger                          - 1 tsp (finely chopped)
  • fennel seed (sombu)  - 1 tsp
  • salt (to taste)







Method :
  1. Soak the channa dal in water for at least 3 hrs
  2. Drain the water completely and grind it coarsely (not fine in texture) with out adding water
  3. Mix all the ingredients together in a bowl ( dal, onions, green chillies, coriander leaves, ginger, sombu, salt)
  4. Heat oil in a pan for deep fry on medium heat
  5. Wet your palms and take small amount of the dal mixture. Place it in the center of the palm and make it as a ball
  6. Then slightly press it with your palm and make patties. Drop into the hot oil.
  7. Deep fry both sides in oil until it turns golden brown
Serve hot with tea and Enjoy!!!
